Chocolate and Coconut Milk Agar-Agar

This chocolate flavoured agar-agar is one of those refreshing
cold dessert my mum and aunties used to make when we were little.
It was such a big thing having some agar-agar on a Sunday afternoon,
and more often than not, it was somebody's birthday party.
The fact that a big part of it is water, it is really cooling
on a hot day, and it isn't exactly fattening, as long as it is not
excessively sweetened. The coconut milk just makes it so creamy!
It is also extremely easy to make - I learned to make it since I
was a teenager!

Ingredients:
• 1 packet of agar-agar (you can buy agar-agar from any Asian food shops, usually 35gram per packet)
• 5 glasses of water
• 1 teaspoon carob powder/cocoa powder
• 1 can of coconut milk
• 1 cup brown sugar
Preparation:
- Cook the agar-agar with 5 glasses of water. When all agar-agar is disolved, add in sugar, carob powder/cocoa powder, and coconut milk.
- Stir till all ingredients are well mixed, then take it off the heat and leave it to cool in a container.
- Chill it when the agar-agar is set.
Versatility Note:
- You can always try using half a teaspoon of instant coffee powder instead of
chocolate or carob, if you like the taste of coffee.
- When setting the mixture, a metal container such as a deep baking tray is better
as it lets the mixture cools quicker. But in the event of unavailability, any container,
mold, or bowl of your choice is alright. Even a deep glass dish can do the trick.
- When the dessert is all chilled, you can either turn it over and transfer it onto
another dish up side down; or just cut into squares and serve directly from the container.

- If normal strip form agar-agar cannot be obtained, you can use powdered agar-agar
too. The amount would be the same: 35 grams strip = 35 grams powder.
